Aji Amarillo Sauce

Ingredients
  

  • 3 cloves garlic
  • 1 jalapeños seeded and roughly chopped
  • 1/2 cup cilantro leaves and thin stems
  • 3 scallions whites and greens, cut into 1 inch pieces
  • 1/2 avocado
  • 2 tablespoons fresh lime juice
  • 1/2 cup mayonnaise
  • 3 tablespoons aji amarillo paste
  • 1 teaspoon honey
  • 1-1 1/2 teaspoons kosher salt
  • 1/4 cup water
  • 2 tablespoons avocado oil

Instructions
 

  • Place all ingredients into a blender or Vitamix and puree until smooth. Taste and add more salt if needed.

Notes

Storage: This sauce will keep up to 2 weeks in the refrigerator, but seasoning may need to be adjusted.
