Fill a cocktail glass with ice. Pour in elderflower liqueur, club soda, then top with sparkling rosè, adding more to fill the glass, as needed. Crush a few mint leaves lightly between your fingers to release the aroma and place into the glass with as many sliced strawberries as you’d like. Stir and enjoy!
