This quick and easy frozen yogurt bark is delicious and also sort of healthy. I love to keep it as a snack in my freezer!
This amazing frozen yogurt bark is made by combining mashed banana, peanut butter, and Greek yogurt. You’ll also drizzle on some chocolate and sprinkle on some roasted peanuts. I’m all about that texture!
I love the way the bark melts in your mouth as you eat it. It’s frozen, but because it’s spread so thin, it melts fairly quickly. It gets creamy and the flavors coat your tongue and it’s just oh-so-perfect!
Your kids will love this recipe, and so will you! It’s even a great recipe for them to make on their own. I think they’ll have a lot of fun mashing the banana!
Ingredient Notes:
- Peanut Butter – You can definitely try other types of nut butters here instead. I didn’t test it out with others, but I don’t see why they wouldn’t be delicious too!
- Greek Yogurt – I prefer to use full fat!
- Dark Chocolate Chips – I like dark chocolate, but feel free to use milk or semi-sweet chocolate chips instead!
- Roasted Peanuts – I used peanuts because I used peanut butter. However, if you’re using a different nut butter, or just want to use a different roasted nut, go ahead! You can also use a candied or glazed nut, like candied pecans or walnuts.
- Flaky Sea Salt – I like using Maldon, which you can find at most grocery stores! You can also buy it here.
Peanut Butter and Banana Frozen Yogurt Bark
Equipment
- 1 Quarter Sheet Pan or any sheet pan
- Parchment Paper
Ingredients
- 1 banana
- ¼ cup peanut butter
- 1 cup Greek yogurt
- 4 oz. dark chocolate chips
- 3 tablespoons roasted peanuts roughly chopped
- Flaky sea salt
Instructions
- Prepare a quarter sheet pan lined with parchment paper (or any sheet pan if you don’t have a quarter sheet pan).
- In a medium-sized mixing bowl, mash the banana with a fork until as smooth as possible. Mix in the peanut butter until thoroughly combined. Mix in the Greek Yogurt and stir until combined.
- Spread the yogurt mixture onto the parchment-lined sheet pan so that it’s about ¼-inch thick.
- Place the chocolate chips into a medium microwave-safe bowl. Microwave for 20 second intervals, gently stirring in between each, until completely melted. Drizzle over yogurt mixture, using it all.
- Sprinkle with peanuts and as much sea salt as you’d like.
- Freeze until solid, at least 2 hours. Then break apart with your hands into random pieces. Enjoy!
Notes
Frozen Yogurt Bark can be stored in an airtight container in the refrigerator for up to 1 month.
