Need something to make with your extra peppermint bark? Try these delicious Oreo-filled rice Krispie treats!
One of my favorite things about this time of year is that you can find peppermint bark everywhere. I’ve always loved it. I mean, who doesn’t? You can find it in everything! Peppermint bark as is, peppermint bark hot chocolate, peppermint bark cookies. And I thought, what’s an easy dessert that I can quickly whip up using my favorite holiday treat? Rice Krispie treats!
These rice Krispie treats are close to a classic recipe. Except, they have chunks of Oreos in them, peppermint extract, and of course, peppermint bark! They’re insanely delicious, easy, and kids will love them too!
Recipe Tips:
There are two important steps when making any rice Krispie treat.
- Don’t overcook the marshmallows. Cook them until just melted, maybe even a bit under. It’s okay if there are some small marshmallow lumps. If you overcook them, it will result in a hard treat, not one that’s light and fluffy.
- When pressing the treats into the prepared baking pan, don’t press down too hard. This will result in a harder, firmer treat as well.
Ingredient Notes:
- Mini Marshmallows – Don’t buy the larger ones, they take longer to melt. Plus, you will mix in the mini marshmallows for tiny pockets of fluff at the end.
- Peppermint Extract – I like to mix in a tiny bit of extract for an added peppermint flavor. My personal favorite brand of extract is Nielsen-Massey, but you can also get Frontier or McCormick.
- Sea Salt – I like using Maldon sea salt, but regular Kosher salt is fine too!
- Gluten-Free Oreos – Most grocery stores sell them, but if you can’t find, you can buy them here. You can also use regular Oreos if you’re not gluten-free.
- Peppermint Bark – Use your favorite for the rice Krispie treats!
Peppermint Bark Rice Krispie Treats
Equipment
- 1 9×9 Inch Baking Pan
- Parchment Paper
Ingredients
- 8 tablespoons (1 stick) unsalted butter
- 8 cups (10 oz.) mini marshmallows, divided into 6 cups and 2 cups (double these amounts if doubling the recipe)
- ½ teaspoon peppermint extract
- ¼ teaspoon sea salt
- 6 cups rice krispies or crispy rice cereal
- 15 gluten-free or regular Oreos, roughly chopped or smashed (I put them in a Ziplock and smashed them)
- 1 cup roughly chopped peppermint bark plus more for sprinkling on top
Instructions
- Line a 9×9 baking pan with parchment paper (TIP: Spray your pan with cooking spray first. Your parchment paper will stick in the pan).
- In a large pot over medium-low heat, melt the butter just until melted. Add 6 cups of the marshmallows (double this amount if doubling the recipe), stirring continuously just until melted (don’t let it cook more as the final result will end up being hard).
- Remove from heat and stir in the peppermint extract and sea salt. Add the rice Krispies and Oreos, stirring to combine well.
- Then add in the peppermint bark and remaining marshmallows.
- Transfer to the prepared pan. Lightly press down mixture with a rubber spatula to gently spread mixture into the pan (don’t press down too hard or the final result will be too dense and tough). Sprinkle with more chopped peppermint bark, as desired, and press down slightly.
- Let treats set for at least 1 hour at room temperature. Remove from pan and cut into 16 squares.
Notes
Peppermint Bark Rice Krispie Treats can be stored at room temperature wrapped in plastic wrap for up to 3 days.
